Chocolate Nut Bran Muffins

1/4 cup melted butter
1/3 cup splenda
1/3 cup ground almonds
1/3 cup Atkins Bake mix
1/3 cup bran
1/4 teaspoon baking soda
2 teaspoons baking powder
1 tablespoon Droste Cocoa Powder -- or your choice
1 tablespoon wheat gluten
1/4 teaspoon salt
1 teaspoon chocolate extract -- or vanilla
1 teaspoon rum extract
1/3 cup sour cream -- + 1T. water
2 large eggs
1/2 cup pecans -- finely chopped

-Place the butter in a medium mixing bowl; microwave on high for about 1 minute to melt.
-Add the eggs, sour cream, splenda & flavorings, stir well with a whisk.Set aside.
-In a small bowl mix all the dry ingredients together.
-Add to the egg/sour cream mixture & stir just till combined.
-Gently fold in the nuts.
-Spoon into greased or sprayed muffin tins.
-Bake at 350* for 15 minutes or until toothpick comes out clean.Don't overbake.

-16 mini muffins@ 3 minus 1.1 gr. fiber= 1.9 carbs & 3.5 gr. protein each
-12 muffins @4.1 minus 1.4 gr. fiber=2.7 carbs each & 4.6 gr. protein each
-8 muffins @ 6 minus 2.1 gr. fiber= 3.9 carbs & 6.9 gr. protein each
-6 Jumbo muffins @ 8.1 minus 2.8 gr. fiber= 5.3 carbs & 9.3 gr. protein each
-12 muffins using pecans @ 4.2 minus 1.4 gr. fiber=2.8 carbs each
-8 muffins using pecans @ 6.3 minus 2 gr. fiber= 4.3 carbs each
-6 Jumbo muffins using pecans @ 8.4 minus 2.8= 5.6 carbs{good for a breakfast
muffin with some protein}
-For a different flavor 1 teaspoon of cinnamon & 1/4 teaspoon nutmeg could be
added to the dry ingredients.
-Nuts of your choice can be used, I like them with finely chopped pecans.
