Gopher's Chicken Parmesan

Serving Size : 4

  • 4 chicken breast, no skin, no bone, R-T-C -- pounded flat
  • 2 tbsp butter -- melted
  • 2 oz parmesan cheese -- grated
  • 1/4 cup Pork Rinds -- finely crushed
  • 1 tbsp oregano or hyssop - chopped
  • 1 tbsp parsley
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Heat oven to 400 F. Mix all ingredients, except chicken and butter, together in a food processor until very fine. Spray a baking pan with no stick cooking spray. Dip chicken in butter and then dip into parmesan mixture to coat evenly. Place in prepared pan. Bake 20-25 minutes or until juices run clear.
