~Ham and Chicken Roll Ups~

~Ham and Chicken Roll Ups~

Ingredients~

1 medium red bell pepper sliced
1 bunch of scallions
1 8oz package of cream cheese (full fat, it’s much better)
1 pound of skinless/boneless chicken breast
12-15 moderately thickly sliced deli ham (honey ham works best, but you can use whichever you like)
1 can of crushed pineapple in light syrup (optional)


Instructions
Slice the red bell pepper into strips and clean the scallions. Grill or pan fry the chicken breasts until fully cooked it can be seasoned any way you like. I suggest a little hot sauce for kick and garlic lightly. Slice the chicken breast into strips. Slice the cream cheese into slices (can make 12-15 slices). Lay out your ham and lay a slice of cream cheese, some chicken, strips of bell pepper, and scallions. Roll up. Now... you can either pour the crushed pineapple over it or not if you don't I suggest you brush them with olive oil so they don't dry out. Depends on how you want your carb count. Coat olive oil lightly on a baking dish and bake at 350 for approximately 10-15 minutes or until warm and slightly browned.

12 begets you 4 servings at (3 per serving) Total 15gms carb with pineapple or 7gms without.
15 begets you 5 servings at (3 per serving) Total 13gms carb with pineapple or 5gms without.

Carb gm totals are per serving and approximated.

This is one of my favorites and it looks nice as well as tastes great. If your not as concerned about carbs you can put honey on or in them to add flavor.
