White Delight Chocolate Cheesecake

Amount Measure Ingredient -- Preparation Method

2 large eggs
8 ounces cream cheese -- softened
1/2 cup Splenda
1/8 teaspoon salt
1 cup sour cream
1 teaspoon vanilla
2 White Delight Chocolate Bars -- *see note

-Heat oven to 350*.Grease or lightly spray a 7 inch springform pan
-Melt 1 1/2 bars of White Chocolate delight{reserve 1/2 of one for garnish}
-In a large mixer bowl, beat the eggs till a light lemon color.
-Add the cream cheese,melted chocolate bar, splenda & vanilla; beat until smooth.
-Add the sour cream; blend in well.
-Pour into prepared pan.
-Bake for40-50 minutes or until edges are set.**Center of cheesecake will be soft.
-Cool in the pan for 5 minutes; then remove the sides of the pan; cool completely.
-Grate remaining chocolate bar over top of cheesecake.If possible make chocolate curls with a vegetable peeler.
-Store covered in the fridge.
-8 servings @4.6 carbs and 5.7 grams protein
These bars are available in Kamloops or can be bought online.They are called Delight and there are several flavors ranging from 2-3.9 carbs each.They were made for diabetics.I think Kamloops people were the testers as I have been buying them for at least 2 years now.Recommend them highly! CW
