LOWEST CARB TIRAMISU EVER

3 eggs, separated (room temperature)
3 tablespoons cottage cheese
1/4 teaspoon cream of tartar
artificial sweetener (equiv 1/4 cup sugar)
150g sour cream
150g cream cheese
2 extra eggs (not separated,beaten)
1/4 cup hot water
1 tablespoon instant decaf coffee powder
artificial sweetener (equiv 1/2 cup sugar)
1/4 cup unsweetened cocoa
imitation brandy

Beat egg whites with cream of tartar until super-stiff.

In a blender or food processor, beat yolks, sweetener and cottage cheese to a smooth consistency. fold gently into whites. pour gently into a sponge/lamington tin, lined with non stick paper. bake at 150 deg celsius for 30-40 mins til golden and risen.

Remove and cool. cut into 'fingers'. mix coffee and water. put half of sponge fingers into a clear glass or salad bowl. sprinlke half of coffee over. beat softened cream cheese, sour cream, eggs and sweetener and brandy flavouring. spread half the mix over the first layer. add another layer of sponge and coffee then spread over remainder of filling. dust with cocoa powder and chill for at least 30 mins before serving. sponge 7 filling 10 total 17 will serve at 6 easily

Add appropriate carbs if using sweetener other than sugromax.
