Eggnog

By : Low-Carb Cooking with Stevia

6 eggs, lightly beaten
2 cups whole milk
1 cup heavy cream
6 packets of stevia (or 3 tsp stevia blend)
1 tsp vanilla extract

Garnish
4 tbsp whipped cream
1/2 tsp cocoa or cinnamon

In a large saucepan, mix eggs, milk, cream, and stevia. Cook over med heat, stirring constantly, until mixture coats a metal spoon. Remove from heat. Cool quickly by placing pan in a sink or bowl of ice and continue stirring for a few minutes. Add vanilla. Chill for 4 to 24 hours. Top each serving with whipped cream, if desired , and sprinkle with choice of garnish

Makes 4 servings 9G carbohydrates per serving
