Default Low Carb Irish Cream

I just tried Sharon's Low Carb Irish Cream on Karen's site lowcarb.ca. I have to say it is absolutely delicious!

I used Canadian whiskey instead of Irish (a bit cheeper), 1 cup of whipping cream & 2 cups of 18% cream & then threw it all in the blender.

Great recipe Sharon. And can't forget Karen, her recipes are awsome.

Does anyone know how long this Irish Creme will keep...does it need to be in the fridge.

The recipe I have recommends storing it in the fridge and consuming it within two weeks. You could cut it down to smaller portions if you don't need a big batch.

Definetly put it in the fridge as it is made with cream

Default Just a thought.

I'm one for believing that if you keep yourself surrounded with foods a drinks that are low carb, that you increase your chance of success dramatically.
With that said I have a thought that I would like your views on. How about omiting the cream from the recipe and adding it when the drink is made. I'm only going to use it in a drink made in coffee.....I'm not sure but I think it may be called a (Hot Tottie or Irish Coffee)?
Once again I'm looking to always have it on hand and if I have to make it on the fly I might be tempted to say the hell with it a use Bailey's.

BTW wouldn't the level of alcohol be enough to kill any bacteria in the mix?
