This will be the ultimate test. In a week, I am flying to visit my parents.

I was raised on starch, baking and BREAD! It was my parents who gave me my breadmaker. When I told my mother that during my visit I could not eat sweets or starches, she said, “WHAT, NO BREAD?”

Fortunately, this winter I spent two weeks trying out low-carb bread recipes. I developed a recipe that really works for me. It's called Final Bread - the end result of all my experiments. I don’t make it often, but it is BREAD and will appease my worried mother. Between that and flax-seed porridge, I am hoping to keep up my no-cheating streak.

Default Kay's Bread

I was one of the lucky ones that Kay shared her recipe with before posting... This is definitely the best low carb "machine" bread recipe I've tried...it even has flax seed. It's almost "I can't believe it's low carb bread". The first time I made it, it rose so high in the oven it touched the top element...and I had to quickly adjust my oven racks. Seems to be the perfect touch....letting the machine do the kneading and the "oven" doing the baking.

I'm very appreciative to find this recipe....especially this time of the year....when it will be so nice to have a sandwich on a hot day.

Not sure what success I'll have with buns....but I'm going to try making buns (i.e. hamburger).

Two of my friends who also low carb tried this bread...and really liked it as well...., so Kay thanks for sharing your recipe with the rest of us!!!

Kay, if you've got anymore great recipes stashed away, please don't be shy...

Sounds really good, will try it ASAP. Any tips for those without bread machines?

If you don't have a bread machine, there is this great recipe called Shepherd' s Loaf . . .

Actually I don't know - the machine is why this bread is my staple recipe - it's easy to make so I have never done it by hand.

I think one of Sharon's friends is going to try this recipe without a machine so hopefully she can share the details.

could the whey powder be replaced with anything else ? I don't have any, and I've spent enough money as it is on various flours.

What you would do to make it by hand is dissolve regluar yeast in the water, then beat in the remaining "wet" ingredients. Mix the dry ingredients together and add them to the wet and knead for 10 minutes. Continue on with the recipe for the rising and baking.

I made this bread today and it is awesome! I used my bread machine for the mixing stage (39 mins.) and then transferred it to a regular bread pan. I must have cut it into thicker slices though because I only got 14. I adjusted the effective carbs and it works out to 3.5gms. per slice. Still very good for a slice of bread!

Hi thanks for posting the recipe, unfortunately I dont own a breadmaker and I hear they are pretty expensive. Can you tell me is the bread in this recipe spongy? Or more breadlike, because if I can find one that is closer to the consistancy of real bread they maybe I will spring for one and make my own.

This bread has the same texture as regular bread. You could make it without a bread machine, you would have to use a dough method...dissolve the yeast in warm water, mix all of the ingredients well and knead the dough by hand. The bread machine is much easier!

Ok that its then! Im going to go over to the in laws and make it with their bread machine this weekend. I hope I do it right, my mom in law has experience baking bread though so she will probably save my butt! I'll report back how it went and how well I liked it. Thanks!

Do we have to use Bread Machine Yeast? Could I use active dry yeast, or rapid rise yeast? thanks.

If you're using a bread machine to do the mixing and rising, then yes you need to use bread machine yeast. Regular yeast needs to be activated or "proofed" first, in water with a little sugar added .. or else it will not rise properly in the dough.

If you're making the bread by hand, you might find these instructions to be helpful .. It's the same recipe except it uses regular dry yeast, and rises and baked in regular oven.
