Smile Egg Mockmuffin

Good evening
First of all let me say what a helpful and motivating site this forum is. I check it out every day and it encourages me.

I am just about to prepare the Egg Mockmuffin and I came to that part where it says to add water to the beaten egg mixture.
How much water do I add? I look forward to hearing from someone.
I was also wondering where to find bacon that doesn't have some sort of sugar in it. Help

Default Egg Mockmuffins

Hi, I also make Mockmuffins, I don't use Norma June's recipe, or really anyones I usually just end up putting ingredients together and they always turn out.

I personally don't add water to mine. I add cream.

Mockmuffins are kind of like making a pizza...you can use different ingredients. Sometimes I use sausage, or ham. Other times I'll use bacon. It depends how well I plan ahead and what ingredients I have around to use. I sometimes put in a tablespoon or two of Atkins mix and that seems to help them stay together better.

I make sure I spray my muffins tins good to ensure the muffins will come out easily.

These are a great idea. I freeze them and then take one or two in a container and nuke them when I get to the office. I find I have no problem freezing them.

Anyways, I'm sure Norma June will drop by and tell you more about how she makes her muffins.

I hope I was able to give you some ideas.

Thanks for your reply. Last night I just went ahead and made the egg mockmuffins. When got to the part where it said to add water, I realized it was a typo and should have been cream.
Anyways I made them last night, so haven't tried one yet. I will for breakfast. They seem just right for a rushed morning or even any morning when you don't want to cook.

Ludi, I make them too, yum E. and very convenient. I do add water, approx one tablespoon per 2 eggs. I find the water makes the eggs fluffier, this is a trick I learned for omelets.

Esskay brand Bacon has no added sugar and is lower in sodium than most bacon. On my diet, I am not permitted to eat pork but once a month, so I opt for turkey bacon instead. Tastes great and better for you. But it all depends on the diet I guess. Hope that I could be of some assistance! Good Luck!

Default Can you really freeze em?

I have held back trying these because the recipe is so large and I live alone and I don't want to eat the same thing for several days. BUT now that I read I can freeze 'em, I am going to make some as soon as I get offline.

Default Gosh, this is great recipe

Why doesn't this have five stars? Yikes, it is great. It would be a great brunch item for a group and no one would even have to know they were eating LC food. These muffins are so beautiful.

I beat the cheese right into my eggs. I only used 8 eggs because my muffin tins are smallish and I knew I was adding the cheese. Good thing because even w/only eight I still had a tiny bit too much egg mixture.

This is going to be a standard, portable meal/snack for me.

Definitely a 5 star quick breakfast.
