Default I tried the Cheesy Chicken Green Bean Casserole

(Edit by Kristine: the recipe is here )

I made this recipe last night. It was ABSOLUTELY FABULOUS!!!
Does anyone know the approx carb count for that?

Default I think I got it figured out on the Cheese GB Chicken Casserole

This is what Calculated in FitDay for the Cheesy Green Bean Chicken Casserole

Total: 2907
Fat: 193 1733 61%
Sat: 75 676 24%
Poly: 41 370 13%
Mono: 63 568 20%
Carbs: 43 120 4%
Fiber: 13 0 0%
Protein: 249 995 35%
Alcohol: 0 0 0%

So if the carbs are 43 and the fiber is 13 does that make this 30 effective carbs? So then if the recipe serves 4 it is approx 7.5 grabs per serving right?

I also highly recommend this. It was almost orgasmic in flavors. Best Low Carb thing I have tried so far.

Cheesy Chicken Green Bean Casserole

Here's an idea I got from the Atkin's Friends group, specifically Dottie. I changed the recipe to use the items I had in the frig.

Cheesy Chicken Green Bean Casserole


2 cans french cut greenbeans - well drained
1 can (4 oz) mushrooms (I used fresh)
1/2 of a med. yellow onion sliced very thin and separated into rings
2 stalks celery, sliced small
2 tbsp butter

1/2 cup heavy cream
1/4 cup mayonnaise
1 cup assorted cheese cut into small dice (cheddar, jack, pepperjack, etc.) (I used a variety of shredded cheeses I had on hand)
1/2 tsp lite salt and 1/4 tsp. regular salt (or 3/4 tsp any)
1/2 tsp pepper
1/2 tsp. garlic powder

boneless chicken breasts (I used 5 small ones)

I use boneless chicken breasts to make a one dish casserole by first browning the chicken in a skillet until almost cooked. I put the chicken in the bottom of a casserole dish, and then added the butter to the skillet and sauteed the onions, celery and mushrooms until soft. Mix (everything together) the mayonnaise and cream, s&p, garlic powder, veggies and cheeses and pour over the chicken breasts. Cover and bake at 350 for 30-40 minutes. Uncover and brown if desired.

Serves 4.

You could make the casserole without the chicken and just have a vegetable casserole if you desired. If you don't include the meat, you probably could cook at little less time. You could also add a few sliced almonds.

This is really yummy, my DH and I LOVE it!!! Thanks for the counts, I'll have to check it against what I have.

The asparagus variation of this is also great -- snap ends off 1 bunch asparagus, chop into 2" pieces, steam ~5 min until about halfway done, and throw into the mixture instead of the green beans.

I also use chicken thighs instead of breasts -- gives it even more flavor and richness, and ups the fat ratios too. I brown the thighs, then pull them into shreds and mix them in with the veggies instead of placing them whole into the casserole dish.

I made this today cause I was running out of things to fix and it was quick and easy to prepare, not to mention EXTREMELY good. I promise low carb feels just like cheating and this dish definitely does the same. IT WAS GOOD!
