If it was sweet enough for you and tasted fine...I don't see why not.

Does anyone know if you can make the Angel pancakes without sour cream? Would you increase one of the other ingredients to compensate if you just left it out? Thanks.

It seems to me that you could do several things when omitting the sour cream:

-Add equivalent oil or an oil/butter mixture
-Add yogurt, if you're a believer in that it's okay
-Add a bit more cream cheese, but about half the amount of the called-for sour cream

Basically, the sour cream would be for adding another fat and some moisture. I'd try a small batch with some modifications and see what you get!

I tried the recipe today.

I used only 1 tablespoon of Splenda as suggested in a previous message. Pancakes were sweet enough.

I found the pancakes better than the Atkins mix, but a little thin - perhaps I need to add more Atkins mix.

Sometimes people use the Splenda packets in a recipe instead of the measures-like-sugar Splenda. Usually, packets will be specified if that's what the recipe creator used. Packets can be used but just remember that 1 packet Splenda has the equivalent of 2 tsp. of the measures-like-sugar Splenda.

Here's a conversion chart
